The Philsner? Our meticulous homage to Bohemian tradition, orchestrated with the precision of DNA sequencing. This Pilsner boasts a bronze color that contrasts with the usual pale lagers —a first clue that this isn't a basic copy-and-paste.
Dr. Shaw (aka Philsner—yes, that's where the name comes from) served as our spiritual guide in this quest for authenticity. We reconstructed the mineral profile of Czech water with the rigor of a chemist preparing a buffer solution. Every ion counts, every sulfate has its role. The Bohemian malt unfolds its aromas of country bread and caramel like a score we know by heart.
But here we are, La Nébuleuse. So we added our two cents: New Zealand Motueka (a distant cousin of the noble Saaz) and a first-wort hopping that brings this subtle modernity. At 38 IBU, the bitterness dances between resin and sweetness. This is the traditional Pilsner that spent time in New Zealand and came back transformed, but without denying its roots.
The story
Philsner was born from an unlikely collaboration with Dr. Shaw, a scientist obsessed with perfectly reproducing historical styles. His nickname "Philsner"? A joke that eventually christened the beer itself.
Our challenge: to scrupulously adhere to the traditional method while infusing it with our creative DNA. The brewing sessions resembled advanced chemistry labs. pH, mineral composition, temperature levels—everything was calibrated to the nearest degree. The choice of Motueka represented our discreet signature, a nod to the antipodes without betraying the bohemian spirit.
This beer embodies our philosophy: honoring tradition without being confined by it. A delicate balance between reverence and innovation, orchestrated with the help of a Pilsner doctor.
