IPA Italian Pizza Ale isn't just a twisted acronym for show. It's our liquid tribute to our friends at White Pony during their visit to Lausanne.
We've replicated the water profile of Florence—the capital of Tuscany, of course—and built a malty base that evokes the taste of freshly baked bread. All of this is supported by the Anglo-Saxon bitterness typical of 35 IBU IPAs. But where things get deliciously crazy is when our traditional hoppy aromas give way to a Mediterranean cocktail: tomatoes, basil, and a hint of lactose.
The result? Olfactory notes reminiscent of steaming pizza, a typical trattoria, or that mouth-watering Caprese salad. On the nose, you'll be transported to a Roman osteria. On the palate, the IPA structure holds its own while those Italian flavors dance like a tarantella on your taste buds.
At 5.3%, it retains that drinkability that allows you to empty your glass without feeling guilty – like a good Italian who knows how to live.
The story
This Italian Pizza Ale was born from a wonderful encounter. When our friends from White Pony arrived in Lausanne, we wanted to make a statement. There was no question of releasing yet another classic IPA—we wanted to create something that spoke to their native Italy.
The idea of reproducing the water of Florence? Pure brewing geekery. Each region has its own mineral signature, and that of the Tuscan capital brings a particular roundness that perfectly fits our vision. Adding tomatoes and basil to an IPA? It seemed like a risky bet, but we love impossible challenges.
Lactose softens the whole thing, like a touch of mozzarella that transforms a simple salad into a comforting dish. This Italian Pizza Ale embodies our belief: the best collaborations come when we dare to think outside the box to pay homage to those we respect.
Food and beer pairings
This Mediterranean IPA logically finds its place in the Italian culinary world , but its pairings go far beyond simple pizza.
Let's start with the obvious: rare beef tagliata, prosciutto focaccia, or a platter of hard cheeses with breadsticks. The beer's tomato and basil notes echo the ingredients on the plate, creating that perfect resonance every pairing enthusiast seeks.
