The portrait
This is a creation that took us into the murky waters of culinary experimentation! Gam'Brass is our bold attempt to bring the ocean and barley into dialogue. This unique Red Ale hid a secret within its coppery color: we incorporated lobster bisque directly into the brewing process.
The idea seemed crazy on paper, but the alchemy worked. The umami richness of this seafood soup blended surprisingly well with the dry bitterness of our malty base. Paprika completed this salty symphony with its smoky and slightly spicy notes—as if we wanted to recreate the atmosphere of a fishing port on a summer evening.
Ultimately, this beer explored uncharted territory, oscillating between land and sea with unexpected elegance. A sensory experience that divided as much as it fascinated.
The story
Gam'Brass (a playful contraction of "gambas" and "brass" for brasserie) was part of our approach to exploring the boundaries between gastronomy and brasseries. The inspiration came from a simple question: why limit beer to traditional ingredients when the culinary world is full of flavors to explore?
This experimental creation pushed us to completely rethink our processes. Incorporating lobster bisque into a brewing recipe required a completely new technical approach. The challenge was significant: preserving the aromatic integrity of this marine preparation while maintaining the delicate balance of a Red Ale worthy of the name.
Food and beer pairings
Gam'Brass obviously excelled with seafood : oyster platters, grilled lobster, and Valencian paella found their ideal partners in it. But we also discovered unexpected harmonies: wild mushroom risotto , lamb tagine with prunes, or even a simple croque-monsieur with Bayonne ham. Its unique umami character created flavor bridges where we least expected them.
The final word
Gam'Brass has closed its nets, but its inclusion in our catalog will have left its mark on adventurous minds. This creation reminds us that true innovation sometimes arises from the most unlikely combinations. It embodied our philosophy: daring to question the rules, even when it leads us into troubled waters. For those lucky enough to taste it, it remains the symbol that we don't shy away from any experience - even the saltiest!
